Snickerdoodle Mix--Entertaining Gluten Free Style

As other Celiacs most definitely did, we celebrated when General Mills started labeling Rice, Corn, Honey Nut, Cinammon, and Chocolate Chex as gluten free.  Chex really is one of the versatile cereals out there.  From Chex Mix to Sweet Nothings/Puppy Chow, you can also make all kinds of recipes out of it.

Our oldest recently had a birthday party at one of the ‘paint your own’ type of places.  We needed to bring snacks, but this, as many Celiacs know, can cause troubles.  We wanted to bring snacks that were gluten free, but that everyone could and would eat.  We decided to try to Snickerdoodle Snack Mix on the back of the Cinnamon Chex box, and it was enjoyed by all!  An easy mix that we share here:

Ingredients

1/4 cup sugar
1 teaspoon ground cinnamon
2 cups Cinnamon Chex® cereal
2 cups Chocolate Chex® cereal
4 cups popped popcorn
1/4 cup butter or margarine

Preparation Directions

1. In small bowl, mix sugar and cinnamon; set aside. In large microwavable bowl, mix cereals and popcorn.
2. In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Pour over cereal mixture, stirring until evenly coated.
3. Microwave uncovered on High 2 minutes, stirring after 1 minute. Sprinkle half of the sugar mixture evenly over cereal mixture; stir. Sprinkle with remaining sugar mixture; stir. Microwave 1 minute longer. Spread on waxed paper or paper towels to cool. Store in airtight container
